A no fuss recipe that is super easy to put together.
Other cooked breakfast meats, such as turkey or pork sausage and crumbled bacon
will work well in this recipe.
6 large eggs
½ c. milk
½ t. salt
¼ t. pepper
4 c. (16 oz. pkg.) frozen shredded hash brown potatoes, thawed
1 c. cubed fully cooked ham (7 oz. ham steak)
½ medium onion, chopped
2 c. shredded cheddar
Whisk together eggs, milk, salt and pepper.
In a large bowl, combine potatoes, ham, onion, peppers and cheese. Transfer to a greased 2-1/2 qt. casserole dish and pour egg mixture over the top.
Don't use a really deep casserole dish or put a lid on while baking.
Bake at 375 degrees for 45 minutes. If top starts to get too brown, lay a sheet of foil loosely over the top and continue to bake an additional 10-15 minutes or until center of casserole is set and not runny.
Remove from oven and let stand 5 minutes before cutting.
