Beef & Barley Soup (Slow Cooker)

Easy to make and full of flavor.
Serve with a good artisan bread!

Ingredients
  • 1 Tbls. canola oil

  • 1-1/2 lbs. ground sirloin (or ground chuck)

  • 2 Tbls. tomato paste

  • 1 medium onion, diced

  • 2 large carrots, diced

  • 2 stalks celery, diced

  • 2 Tbls. Worcestershire sauce

  • 1 Tbls. pure cane sorghum

  • 2 t. smoked sea salt

  • 2 t. dried oregano

  • 1 t. smoked black pepper

  • 1 bay leaf

  • 28 oz. can diced petite tomatoes

  • ½ c. barley (not instant)

  • 5 c. beef stock (Kitchen Basics)

  • Parmesan cheese, grated (for serving)

Instructions

Heat oil in a large skillet over med-high heat. Add the ground beef and brown until no longer pink.

Add tomato paste and cook for another 2 minutes.

Pour the meat mixture into slow cooker or crock pot, along with the remaining ingredients, except the cheese and stir to combine.

Cook on HIGH for 4 to 6 hours or LOW for 6 to 8 hours.

Serve with grated parmesan cheese on top
