Banana Nut Bread

Also makes 4 mini loafs; only bake 40-45 minutes

Ingredients
  • 3/4 c. butter

  • 1-1/2 c. white sugar

  • 4 eggs

  • 4 bananas, smashed

  • 1-1/2 t. vanilla

  • 3 c. all-purpose unbleached white flour

  • 1-1/2 t. baking soda

  • 1/2 t. salt

  • 1/2 c. chopped walnuts or pecans

Instructions

Cream butter, sugar and eggs. Mash bananas with vanilla and add to cream mixture. Stir in flour, baking soda, salt and nuts.

Divide batter into 2 greased and floured medium loaf pans (or 4 mini loaf pans)

Bake at 350 degrees for 1 hour (40-45 minutes for mini loaf pans). When done, loosen edges with a knife and let stand in pan for 5 minutes before removing to wire rack to cool.
