3/4 c. unsalted butter, softened
½ c. white sugar
½ c. brown sugar
1 egg
1-1/2 t. vanilla
½ c. ripe banana, mashed (1 large banana)
1 c. unbleached white all-purpose flour
½ c. whole wheat flour
¾ t. salt
½ t. baking soda
1 c. old fashioned oats
8 oz. Ghirardelli chocolate chips or chunks (dark or semi-sweet)
In a mixing bowl, using an electric mixer, cream butter and sugars.
In a separate small bowl, beat egg and vanilla until fluffy, then add to butter/sugar mixture.
Mash banana and add to batter.
By hand, stir in flours, salt, baking soda and oats until blended. Fold in chocolate chips.
Chill dough for a few hours.
Using a cookie scoop, drop rounds of dough onto baking sheets lined with parchment paper.
Bake at 350 degrees for 12-15 minutes or until browned.
