1/4 c. good olive oil
1/8 c. (2 Tbls.) good balsamic vinegar
1/2 t. honey
1/2 t. Dijon mustard
1/2 of a shallot
1 small garlic clove, minced
salt and pepper to taste
1-2 Tbls. of water to thin, if desired.

garbanzo beans (rinsed and dried)
bell peppers (green, yellow, red, and/or orange)
scallion or red onions
mushrooms
feta cheese
Add oil, balsamic, honey, Dijon mustard, shallot, garlic, salt and pepper together in a small bowl or jar.
Whisk or shake vigorously until well combined. If you prefer to thin a bit, add a little water.
Store in refrigerator.
