Red Potatoes: Italian Oven Roasted Baby Red Potatoes
Ingredients
  • 2 pounds small red potatoes, quartered

  • 4 Tbls. olive oil

  • 4 garlic cloves, minced

  • 2 Tbls. dried parsley

  • 1 t. dried oregano

  • 1 t. dried basil

  • 1/4 t. pepper

  • 3/4 t. salt

  • Freshly grated Parmesan cheese, optional

  • sour cream for serving, optional

Instructions

Place potatoes in a large bowl. Drizzle with oil; toss to coat evenly.

Combine the garlic, parsley, basil, oregano, salt and pepper; sprinkle over potatoes and toss to coat evenly. Transfer to an ungreased 9 x 13 x 2 in baking pan.

Bake uncovered at 400 degrees for 30 minutes.

Stir; bake 10-15 minutes longer or until potatoes are tender and golden brown.

Add parmesan cheese the last 10 minutes of baking, if desired.

NOTE: Serves 8.
