1/4 c. canola oil
1/2 + 1/3 c. white sugar
1 egg
1 t. vanilla
1 c. unbleached all-purpose white flour
1 t. baking soda
3/4 t. cinnamon
1/4 t. nutmeg
2 c. chopped, peeled apples (Granny Smith or Macintosh)
1/2 c. chopped walnuts
3 oz. low-fat cream cheese, softened
2 Tbls. butter, softened
1 t. vanilla
1-3/4 c. powdered sugar
In mixing bowl beat oil, sugar, egg and vanilla. Combine dry ingredients and stir in by hand. Batter will be dry. Stir in apples and nuts. Pour into a greased and floured 9x9" pan.
Bake at 350 degrees for 25-30 minutes. Cool and frost.
Frosting: Beat cream cheese, butter and vanilla. Gradually add powdered sugar until frosting has reached desired consistency.
Frost cooled cake.
