This has amazing flavor without any oil, butter or cream for the sauce.
Add a splash of bourbon to the sauce to enhance the flavor even more,
Perfect dessert during apple season and in Fall
1 c. unbleached all-purpose white flour
1 c. white sugar
1 t. baking soda
1 t. ground cinnamon
1 egg, slightly beaten
2 c. shredded peeled tart apples (macs, granny smith)
1/4 c. chopped walnuts
1/2 c. light brown sugar
2 Tbls. unbleached all-purpose white flour
1/8 t. salt
1 c. water
1 Tbls. butter
1/4 t. vanilla
Splash of bourbon, optional
In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. Combine egg and apples; add to flour mixture and mix well. Stir in walnuts.
Transfer to an 8-inch square baking pan coated with nonstick cooking spray. Bake at 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean.
Sauce: In a small saucepan, combine the brown sugar, flour and salt. Gradually add water; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook 1-2 minutes longer, or until thickened.
Remove from heat; stir in butter vanilla. If desired, add a splash of bourbon to the sauce.
Serve with warm cake.
