9-inch unbaked pie crust (top and bottom)
1 Tbls. butter
8-10 cups peeled and sliced baking apples such as Macintosh (8-10 medium)
1/2 t. nutmeg
1-1/4 c. white sugar
1/2 c. unbleached all-purpose white flour
1 t. cinnamon
1/4 t. salt
1 Tbls. lemon juice
If using a ready-made crust, unroll pie crust and roll out a bit to fit your pie plate. Place in pie plate
Mix all of the apple filling ingredients and put into a prepared 9-inch pie crust.
Dot with 1 tablespoon of butter before putting on top crust.
After about 20 minutes of baking, cover edge of pie crust with a 3" strip of foil or use a pie crust shield to prevent excessive browning.
Bake at 425 degrees (see note below) for 25 minutes, reduce temperature to 400 degrees for an additional 20-25 minutes or until crust is golden brown. Total baking time should be 45-50 minutes.
