1 egg
1/2 c. milk
1/4 c. canola oil
1/2 c. white sugar
1-1/2 c. unbleached all-purpose white flour
2 t. baking powder
1 t. cinnamon
1 c. grated or chopped granny smith apple
Mix egg, milk and oil.
Add dry ingredients and fold in apples.
Spoon into greased or paper lined muffin cups until 2/3 full.
Sprinkle a little brown sugar on top of each, if desired.
Bake at 400 degrees for about 20 minutes. Remove to wire rack.
