1/4 c. butter, melted
2 large apples, peeled, cored and sliced (granny smith or macintosh)
1/3 c. brown sugar
1/2 c. butter, melted
1/2 c. molasses
1/2 c. white sugar
1/3 c. packed brown sugar
1 egg
3/4 c. hot water
2 c. unbleached all-purpose white flour
1 t. baking soda
1 t. cinnamon
1 t. ginger
1/2 t. ground cloves
1/4 t. ground nutmeg
1/2 t. salt
vanilla ice cream, for serving
Spray into a 9-inch square-baking pan lightly with non-stick cooking spray. Add melted butter and arrange apples over margarine; sprinkle with brown sugar and set aside while preparing the cake.
Combine melted butter, molasses, sugars and egg in a mixing bowl; mix well.
Combine dry ingredients; add to sugar mixture alternately with hot water. Mix well and pour over apples.
Bake at 350 degrees for 45-50 minutes or until the cake tests done.
Cool 3-5 minutes. Loosen sides and invert onto a serving plate.
Serve with a scoop of vanilla ice cream.
