6 large apples, sliced (I use macintosh)
1 c. dried cherries (Door County)
3 Tbls. whole wheat pastry flour
3 Tbls. dark brown sugar
1 Tbls. dark honey (regular honey will work)
3 Tbls. extra virgin olive oil
Frozen Vanilla Yogurt or Vanilla Ice Cream, optional
1 c. old fashioned rolled oats
1/2 c. sliced almonds
2 Tbls. whole-wheat pastry flour
3 Tbls. dark brown sugar
1-1/4 t. ground cinnamon
1/4 t. ground nutmeg
1/2 t. salt
Preheat oven to 350 degrees. Brush a 9 x 9-inch square deep baking dish with a light coating of olive oil.
In a separate bowl, place thinly sliced apples and cherries. Add flour and sugar and toss to coat; add to the baking pan.
In a separate bowl, combine all the ingredients for the topping; drizzle with honey and olive oil and mix to coat. Sprinkle topping over the fruit.
Bake about 45-50 minutes or until the apples are soft and the topping is lightly browned.
