1/2 c. butter, melted
2 eggs
2 Tbls. poppy seeds
1 t. orange extract
1 c. milk
2-3/4 c. Master Mix
3/4 c. sliced almonds
8 oz. low-fat cream cheese, softened
1 t. vanilla
1 egg
1/2 c. white sugar
Preheat oven to 400 degrees.
Cream Cheese Filling: Using an electric mixer, whip cream cheese, sugar and vanilla until smooth. Add egg and whip together until just combined. Set aside.
Muffin Batter: In a large mixing bowl, combine butter, eggs, orange extract, poppy seeds and milk until thoroughly combined. Add Master Mix and stir until just combined. Fold in almonds.
Spoon batter, 2/3 full, into greased or paper lined muffin cups. Top with a tablespoon of cream cheese topping and spoon a little more batter on top.
Turn oven temp down to 375 degrees and bake for 15-18 minutes or until toothpick inserted in the center comes out clean.
